I love the way you evoked winter in this essay. Mikwakee (at the time of writing) is the complete opposite of mid-summer where I am, but it's always nice to read something cosy to help push through the heat.

Yep, I had that experience of developing lactose-intolerance in my early-20s. It started when cheese on pizza and my all-time favourite dessert, baked cheesecake, started making me feel crampy and gross for days. So I started ordering pizza sans cheese and said goodbye to cheesecake. Pretty soon, I could only stomach skim (2%) milk, and within 12 months couldn't stomach dairy milk at all. I'm thankful we live in a society where non-dairy milks, cheeses, and desserts are abundant (even if you do pay more for them which is unfair since it's a dietary requirement, not a choice).

Highly reccomend looking out for cashew cheeses at a farmer's market! They are hard to find, but so worth the hunt.
